Sometimes your ideas in the kitchen don't turn out quite the way you plan. That doesn't mean the results aren't delicious. I was inspired by Silk Fruit&Protein Mixed Berry to create a healthy berry trifle.
To make things easier I started with an angel food cake mix. I replaced the water in the recipe with Silk Fruit&Protein. Let's just say the cake cooked unevenly and sort of overflowed the bundt pan.
But while that was going on in the oven I attempted to whip the Silk Fruit&Protein. And...well...you can't. I added a touch of heavy cream, which thickened the Silk, but it wasn't what I was hoping to create. I was still, however, determined to make this work.
I layered the parts of the cake that cooked correctly in small trifle dishes with the frothy Silk and sliced strawberries. I put it all in the fridge and crossed my fingers.
To my surprise it actually tasted delicious! The Silk Fruit&Protein/heavy cream mixture thickened while chilled. The berry infused angel food cake was moist and delicious and the strawberries gave a nice fresh taste and texture. If I was repeating the recipe I would replace only a third of the water in the cake with the Silk and I would fold additional Silk into already prepared whipped cream. Although things didn't go as I had planned I still ended up with a healthy and tasty surprise!
I still had plenty of strawberries and the Silk Fruit&Protein/cream mixture left over. I decided to make a popsicle to go along with my trifle. I diced up the remaining strawberries and added the Silk and cream mixture. I stirred in one tablespoon of corn syrup to help avoid the pops resembling ice cubes.
I poured everything into small paper cups and inserted lollipop sticks that I had on hand.
I had an easy and healthy summer treat just a few hours later. Even though things went a little off track this time, I enjoyed my happy accidents in the kitchen. And even if that had failed...I could have always just enjoyed a glass of Silk Fruit&Protein!

ReplyDeleteThose look delicious! I'm going to have to try it...we still have some Silk Fruit&Protein in the fridge! BTW I love the mixer and the pics...especially the one of the strawberries in the bowl!
