Sometimes It's Easy Being Green #CrystalRollOn

I fully confess to being a hypocritical earthie. I recycle almost everything I can, I use organic laundry detergent, I take my own bags when I go shopping. But I am only green when it's easy. I will spend a little more on an earth friendly product, but I won't spend much. And it has to work! I tried natural dishwasher liquid and it didn't work. I went back to my favorite product immediately.
When it comes to personal care products I'm pretty hit or miss. I have some great natural face, lip and skin care products that I use and love. One area where I hadn't gone green was my deodorant. I had no desire to even try natural deodorants after many,  many stories of them not working. No one wants to be smelly!

When I started to hear from several blogging friends how great Crystal Roll On was I had to take note. Apparently so did lots of others-it was sold out the first two times I tried to purchase it!

When I finally visited a Walmart where Crystal Roll On was in stock I couldn't wait to try it. Then I got a little scared. What if it didn't work? I decided to do an experiment. I used my regular deodorant under one arm, Crystal Roll On under the other. (I also kept my regular deodorant in my purse, just in case!) I don't typically use roll on deodorant-I find it sticky and slow to dry. That wasn't the case at all with Crystal Roll On-so far, so good!
I'm afraid I might have looked a little crazy the first day I tried Crystal Roll On. I kept sniffing to check that everything was OK. And it was! I typically use scented deodorants and since the Crystal Roll On that I was using was unscented that took a bit of getting used to. When I would check I smelled nothing. Hey, wait-that means it's working! Crystal makes several scented versions and I would love to try those if I ever see them on the shelf. Day one was a complete success. I even decided to use only Crystal Roll On on day two. (I didn't even put my emergency regular deodorant in my purse!)

Making Sortta She-Crab Soup

I adore She-Crab soup. I get it every time I'm at the beach and I see it on the menu. Sadly, it's been far too long since I've been to the beach and I was really craving this. Feeling like a pretty awesome cook after my successful spicy Romano sauce I thought, again, I can do this!
Wow, She-Crab Soup recipes are scary. I had no idea how many odds and ends went into making this stuff. Roe? I don't even know where to find roe. I don't like sushi that has roe. Who knew?
I finally settled on the recipe from Emeril Lagasse. It looked pretty straight forward and didn't require roe.
Have I mentioned I've never made soup before? Seriously, never made it. Even though I love cooking. Even though I love soup. (Well, I've made soup if we count opening a can, but that is it.) This soup is awesome! I will definitely be making it again. I read the reviews and made a few addaptations. I left out the egg, used one onion instead of two, used probably half the celery and I used a little nutmeg instead of mace.
Success! It's really good. It's not quite like being at the beach, but it's certainly making it feel a little like I'm on vacation. The only really pricey ingredient is the crab, and I think the soup would be just as yummy if it was a little lighter on the crab. I'm definitely adding this to my dinner planning rotation. (Not quite up for making it weekly, but maybe monthly?)
Now I'm ready to attack another scary recipe!

White Chocolate Candy Corn M&Ms...In A Cake! #MMsGetCorny

After much waiting and anticipation I finally found the White Chocolate Candy Corn M&Ms at my Walmart. I bought two bags and I knew right away what I wanted to do with them-make a cake!

I threw the M&Ms in a blender, pulsed them into a fine mix, then added it to my cake batter. Easy as pie. (Actually, easier...I'm really not that good at making pies.) I used a box mix, but you can certainly use your favorite recipe.
Cupcakes are my area of expertise. I should really stick to what I know, but I was determined to make a layer cake this time. One word of advice: line your cake pans with parchment paper. The candy makes things extra sticky and the parchment paper will make getting your cake layers out much easier.
I decided to make a spooky tree on my cake. Decorating layer cakes is really not my thing. But I tried.

No, the M&Ms don't actually glow...that was just the flash from my camera phone. The cake's appearance wasn't too bad. (Next time I will stick with cupcakes.) The cake itself was really delicious. I can see White Chocolate Candy Corn M&Ms making their way into lots of fun recipes like brownies, cheesecake and more. Let me know what you decide to try!

Italian Sausage In Spicy Romano Cream Sauce #GourmetCreations

It was a sad day. The Italian restaurant down the street had been torn to the ground. I'm still not sure what is going in it's place. Meanwhile, their Spicy Romano Chicken would be no more. And that made me sad. (It was a favorite of mine.)
Then I remembered, "Wait, I can cook!" and I decided then and there I was going to figure out how to make this myself.
Italian Sausage, Spicy Romano Sauce, Spicy Romano Cream Sauce, Hillshire Farm, Gourmet Creations
And I did! I made my own variation, which is one of the things I love about Italian cooking. You can make everything your own way. There's not a right or wrong way to do things. My major change was swapping the chicken for Hillshire Farm Gourmet Creations Sweet Italian Style Sausage. So how can you make this dish yourself?

Ingredients:
1 package Hillshire Farm Gourmet Creations Sweet Italian Style Sausage
2 tbs butter
1 package (8 oz.) fresh sliced mushrooms
1 can quartered artichoke hearts
1/2 cup cream
1/2 cup Romano cheese
6 sun dried tomatoes
1 tsp cayenne pepper
1 bunch fresh chives
Pasta of choice

Bring water to a boil in a large pan and add the sausages for about 10 minutes. Take the sausage out of the pan and slice on the diagonal. Pour any remaining water out of pan and return the sliced sausages.  Lower heat to medium high. Add butter and mushrooms, stirring often as you caramelize the sausage and mushrooms. Lower heat to medium and add the drained artichokes, cream and Romano cheese. Slice the sun dried tomatoes into thin strips and add them to the pan, along with the cayenne pepper. Continue stirring until the sauce is thick and creamy. Remove from heat and toss with pasta and sliced chives.

This was a delicious meal for a Wednesday night-the perfect way to celebrate making it halfway through the week. It was also surprisingly easy and low mess-one pan, one pot and  a cutting board were the only dishes to clean after cooking.

This is also easily adaptable. Don't like mushrooms? Don't use them. Want more heat? Load up on the cayenne or add peppers. Personaly, I thought it was perfect just the way I made it. This will definitely make it's way into my regular dinner planning rotation!

Wordless Wednesday

This week I attended the North Carolina State Fair. Although it's blur of deep fried goodness, the one stand out from the evening was the Deep Fried Kool Aid. This stuff is delicious! For the uninitiated, it's similar to a funnel cake, although it has a Kool Aid flavor in the batter. My best guess at the recipe is mixing Kool Aid in the mix instead of water before frying. Whatever the recipe, it's delicious and I highly recommend you try it given the chance. (Just eat a few salads over the next few days...it will be fine!)

You've Got Boo-Mail #DontBeTheDarkHouse

The first October in my current house we were having dinner when the doorbell rang. When I went to answer there was a little bag on my front porch. Inside the bag there were treats, a picture of a ghost and a little poem. The poem explained that I was to put the ghost picture on my door and then "Boo" two of my neighbors with their own bags of treats. (The ghost on the door would let me know who had already gotten treats and who was still waiting.) That was my first introduction to getting Boo'ed.
I actually started the tradition of Boo'ing at my office and it's still going strong. Everyone looks forward to Boo'ing season and it's fun to watch it spread throughout work.
This year I heard about a new idea: Boo'ing by mail! I knew just the person-a blogging friend who I had just worked with on a project.
Since I was sending this to a household with five people I wanted to send five Boo bags. I started with everyone's favorite: chocolate! Specifically mini sized Snickers, 3 Musketeers, Milky Way, and Twix bars. I also included full size versions of each of those, plus a bag of M&Ms for good measure. (I have always heard tales of the mysterious house who handed out full size candy bars on Halloween, but I've never gotten one. I figured I could be the mysterious person who put full size candy bars in my Boo bags.)
I divided my candy between the five bags, and added a little spooky treat as well. (Plastic spiders, bats, skeletons, etc.) I used simple black paper bags for the treats. Using a hole punch I threaded orange ribbon through each corner to close the bags.
I finished everything off with a fun note, including a really cute vampire bunny image I found online and a poem. I hope everyone enjoys their treats-and I hope you're inspired to "Boo" someone yourself!

Trust Me, I'm A Blog Designer...

OK, that's not even remotely true. I have a very limited skill set that was all learned by typing things into Google-but I'm more than happy to help any of my friends if they need something done that I can actualy do.

Enter my friend Christy from Insanity Is Not An Option. Christy is pink and sparkly. Her blog was not. I offered to help and here is what we came up with:

That stayed for a day, then Christy decided she would rather it say, "Welcome to my sparkly asylum" instead of "the asylum" and asked if I could change it. After checking in to make sure she could see it and let me know if she approved I changed it. To this:
In my defense, she just asked me to change it-she didn't ask me to make it look nice! I only left it up for a minute, and after confirming she had a chance to see my original edit live on her blog I replaced it with the real header:
Personally, the original edit is my favorite. (I think Christy liked that one best, too.) But perhaps it's not the most professional header...At least it can live on here. (It certainly makes me laugh every time I look at it!)

A {Candy} Apple For The Teacher #GlueNGlitter

Everyone's heard of the classic teacher's gift: an apple. But having grown up in a family full of teachers I don't think any of them ever actually received an apple as a gift. Lot's of apple paperweights, apple cross stitch and other miscellaneous appley swag, but no actual apples. Fall is the perfect time to make apple treats, and one of my favorites is a candy apple. Why not make a candy apples for your favorite teacher? So how do you make candy apples? It's really easy...perhaps a little tricky just because temperature is such an issue. (But I know you can do it!)


You'll need:
2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 teaspoon red food coloring
6 medium apples (I love Granny Smith for this)
  • Start by boiling a pot of water. You'll want to de-wax the apples by dipping them quickly in the boiling water to remove the wax coating found on most store bought apples. Just dip in for a second using tongs, then pull the apple out of the water and wipe off with a paper towel or clean cloth. If you do this ahead of time don't be alarmed if the apples turn brown-as long as they were only in the water for a second or two they'll be just fine.
Next you'll want to prepare your candy coating. Mix the sugar, water, corn syrup and food coloring in a small pot. Bring everything to a boil, then lower to medium high heat. Add a candy thermometer to the side of the pot. You have to have a candy thermometer for this-otherwise it's next to impossible to hit the right temperature. You need for the candy to reach 300 degrees. (Just shy of hard crack stage.) This will take about 20 minutes...do go too far away. Once it hits 300 degrees you'll want to pull it off of the heat immediately. While you're waiting prepare a surface for the apples. I use a marble tile, but you could also use a silicone baking mat or a baking sheet lined in parchment paper. Add just a thin coating of butter to the parchment paper to keep the apples from sticking.  Go ahead and add sticks to each apple, too.
When the candy reaches 300 degrees pull it off the heat. (It will continue cooking for several minutes off the heat so it's important to remove it quickly.) Start to dip your apples-turn the pot to the side and use a quick twirling motion. You do not want to keep the apples in the candy for more than a few seconds or the apples will start to cook. Place the apples on your prepared surface to cool.
  • Have I scared you off with the overly specific instructions? I hope not-candy apples are really easy to make, you just have to be careful with the temperature issues.
  • Now for the really fun party-turning your yummy candy apples into a fun gift for a special teacher.  First put the apple into a large treat bag. The secret to getting a candy apple-which is sticky-into a treat bag is to turn the bag inside out and place it over your hand. Then put the apple in your hand and turn the back right side out. Easy!

  • You'll also need a tag for your gift. I used white,green, red and yellow papers to make my tag. I printed out my message on the white paper, then I made red and green borders using Elmer's CraftBond Glue Spots in the pop up size to create a shadow effect. I then attached apples punched out of red, green and yellow paper using the CraftBond Permanent Dot Runner. (I confess, the whole thing turned out a bit bigger than I had planned-you can't even see the apple!) Just punch a hole in the side or center and tie on with a ribbon. You have a cute teacher treat, plus some extra candy apples for the family to enjoy!

Organizing For The Holidays

Like it or not, it's officially holiday season. The Halloween supplies are already getting pushed to the side to make way for Christmas in the stores. This doesn't bother me-I'm well into Halloween mode already-but I also plan for Christmas pretty much year round.
To keep everything from falling into complete chaos I organize everything into color coded bins. If you were to look in my attic you'd find green and red bins full of Christmas supplies, orange and black bins for Halloween and lavender bins for Easter. When it's time I just pull the appropriately colored bins from the attic.
I also refuse to fight the extended holiday shopping seasons. I actually start Christmas shopping on December 26th. There's nothing wrong with starting early. (I secretly think that the people who roll their eyes at us early shoppers are jealous.) It's all about doing what works for you-and starting early works for me. (And it helps me save a ton of money!) If you prefer to shop on Christmas Eve, that's fine too.
Making lists is key. Since I start shopping so early I can easily forget what I've purchased for whom and some cases where I've put it. I keep a running list of everything I have and where it is located. If you're a late shopper the lists are just as important. In the rush to finish it can be easy to forget things.
Are you a Christmas minimalist or maximalist? I love to decorate and give lots of gifts and send cards to almost everyone I know. That's not everyone's style, and that's OK. If you're a Christmas minimalist, that's perfectly alright. Do what's going to make you and your family the most happy. And don't compare what you do to what anyone else is doing-do what works for you, not what you need to do to keep up with the neighbors.
Think ahead about what travel needs and plans you will have. The larger your family is the more challenging this can be. Planning early can also help with saving money. Don't forget to be understanding when things don't work out. It's often very hard during the holidays and sometimes plans just won't work out. Who says you can't get together just before or just after the season and celebrate a bit off schedule with those you love?
It's the thought that counts. In a season of excess it's easy to fill like you're not doing enough. A simple gesture from the heart is so much more valuable than an extravagant gift with little thought behind it. Consider making some of your own gifts or creating homemade treats. Everyone loves a gift that's made with love.
Take help during the holidays when it's offered. You don't have to be a superwoman. If someone offers to pick up something from the store or help with the cooking, let them! They wouldn't be asking if they weren't willing and able to help. The holidays can be stressful enough, so take help when it's offered.
Think outside of the box. There are so many fun ideas out there for decorating and cooking and gifting during the holidays. Read blogs and find ones that fit with your personal style and skill set. Even if you're not very crafty you'll find some fun ideas that you can try.
Have you noticed a theme yet? I think the holidays are all about staying true to yourself and what you love. Spend time with the people you love, celebrate the way you love, give the types of gifts you love.  Whatever you do, do what works for you.

Is It Cold and Flu Season Already?

Every morning at work I get to visit classrooms full of bright shining eyes and runny, crusty noses. You know what that means? Cold and flu season is officially here. Of course if that sight wasn't enough to let me in on the secret, the flu shot clinics at every corner and the pressure in my own sinuses sure would!
After um...let's just say a lot...of years working with very young children I have the immune system of a champ. It certainly hasn't always been the case. I have had bouts of flu that would make a grown man cry. (However, as a grown woman I merely sucked it up, took some medicine and wished I had my mommy with me.)
So what do I do to prevent getting a cold or flu? Well, first of all, I can't prevent them. This is all about risk reduction. Those nasty bugs are out there looking for any chance to invade. I start each year by getting a flu shot. I know flu shots aren't for everyone and I have certainly argued with my fair share of friends who are convinced the shot gave them the flu. Hey, it's your body-your call. I, however, cannot imagine a year without a flu shot. That sounds almost as bad as a year without a Santa Claus! Have I gotten the flu in years that I've gotten a shot? Sure. Has it been as often or as bad as it was before I started getting the shots? No. That's good enough for me.
I am also a handwashing freak. I'm sure at least part of that can be credited (blamed?) on my job. I actually spend at least part of every day talking about handwashing and training on it at work. It's that important. We get a cold or flu by touching the virus and then touching our face. We touch our face a gazillion times a day. As a matter of fact you just touched your face. Really, you did...it's the power of suggestion. Do you know what you were touching between the last time you touched your face and the last time you washed your hands? Exactly-when it doubt, wash up!
Stay on top of your health by adding in needed supplements and following a healthy and balanced diet. The healthier you are when you start the better able your body will be to fight any nasty viruses that try to invade. I swear by taking daily probiotics now, in addition to a fruit and veggie supplement and daily vitamins. Yes, this means I'm taking five pills a night. But I've never felt healthier. Vitamin C and Zinc are my go to helpers in cold and flu season.
My final piece of advice has no basis in science. It's just an observation. Be prepared! The worst feeling in the world is being sick and then having to go to the store to buy medicine. For some reason when I have a fully stocked shelf of cold and flu supplies I don't need them. When I'm out, I get sick. Mind over matter? Murphy's law? Who knows? I just know that now I make sure I have everything I might need before I need it.

Attack of the 50ft Party-Planning A Monster Bash With Kmart Halloween

It's October and that means it's officially Halloween season! I love Halloween, if for no other reason than it's a socially acceptable time for someone in their 30s to dress in a silly costume. And I love the parties. There's nothing like a Halloween party to bring out the kid in all of us.
Kmart has everything you need to plan a bash that even the most ghoulish of your friends will enjoy. You can find monster deals including 30% off your Halloween costumes, 25% off fog machines & strobe lights,  and a printable coupon for $1 off a monster bag of candy. (You bag of candy may or may not contain actual monsters.)
If you're planning a party you'll want to decorate! Start outside and greet your quests with a spooky graveyard or a silly spider at the door.
(I have to confess-there was a really scary spider by the door when I put my spider web out-of the real variety! I politely asked him to move to another part of the yard...) Of course my personal favorite way to decorate for Halloween is with candy. Jars, glasses and bowls filled with colorful candy always look great. And there's nothing like the nostalgic charm of a classic pumpkin treat pail filled to the brim with treats to put a smile on everyone's face!
Of course if you're going to have guests you'll need to feed them. (And Halloween is a great time to over-do it on the sweets!) I got the idea for these great skeleton cupcakes from Party BluPrints
I tweaked the plan just a little by dip-frosting the cupcakes. (Just microwave your frosting for a few seconds and dip in the cupcakes-super easy and it gives a great smooth finish.) I also thought it would be fun-and creepy-to have the cupcakes ooze blood! So I cut a hole in some and filled with red jam. It couldn't be easier! (And ickier!) 
Another super fun and easy treat to make: Spider Oreos! I've seen these before with licorice, but I'm not a fan of licorice. Instead I piped melted chocolate onto wax paper to make the legs. I then inserted eight chocolate "legs" into each cookie. Add a dot of frosting and adhere mini M&M eyes and you're done!
After trying these I can recommend two things. Go a little thick on the piping to keep the legs from breaking and buy double stuff Oreos. Who knew spiders could be so cute?
